
I asked for this recipe from my aunty years ago after she brought this salad to a family gathering. It’s so simple, but has a great kick from the dressing. This recipe is also very versatile, other vegetables can be added like shredded napa cabbage, beans sprouts, sliced spring onion or cucumber. The herbs and nuts can also be changed up to make different riffs on this salad. I recommend playing around with it!

My Aunty’s Carrot Salad
Ingredients
- 1 kg Carrots
- 1 bunch Coriander
- 50 g Crushed peanuts
Dressing
- 2 tbsp Sweet chilli sauce
- 1 tbsp Fish sauce
- 1 tsp Sugar
- 1/2 Lemon juiced
Instructions
- Grate the carrots and roughly chop the coriander and add to a large bowl with the chopped peanuts.
- Add the dressing ingredients to a jar and shake to emulsify, taste for balance and adjust if necessary. Add the dressing to the salad and mix well. Serve up!

Customise this!
Add different vegetables such as napa cabbage, spring onions, bean sprouts, cucumber, mix up the herbs (I have even done this with basil), add different seeds or nuts for crunch!
